Eggplant Harvest

This year, we grew Black Beauty Eggplant from seed. Aren't they pretty? We're trying to find some kid friendly recipes with eggplant. It was Joseph's idea to grow eggplant this year. He doesn't even know if he likes it....guess we'll find out. I love eggplant.
